If you play vanilla or on servers, you really only need the default amount that is dedicated to Minecraft. However, if you play any sort of popular modpacks, which are usually quite large, you will need at least 4 Gb. You may even need up to 6 or 8 Gb if you're playing an exceptionally large pack.

2 GB and more should be depending on players plugins and mods. This depends. If it's a huge minecraft server like 9,000 people for massive servers, you definitely are going to need at least 12. But for a a small server, around 100 people, then 8 gigs will be enough.

Generally 1 GB of ram is everything I need for playing moded minecraft with less than 20 mods so if you have trouble and 8 GB ram it is other componants who are insufficient probably (surprisingly minecraft use the graphic cards a lot more than it should).

8GB of RAM is indeed enough for Minecraft to run properly. Keep in mind that RAM is not what makes a computer fast, though. You'll still have a low FPS rate if your CPU isn't good enough, regardless of how much RAM you have. GPU is not as important in Minecraft, but you'll still want a decent one.
